Dried Amomum Fructus Tsaoko

Essential for making certain Sichuan recipes, this product is more appropriately called red cardamom. This cardamom is not smoky like Indian black cardamom (badi elaichi), nor is it as strongly perfumed as green cardamom (elaichi). It’s a bit more earthy/woody, with a nice, spicy bitterness; it makes an excellent substitute for the harder-to-find Ethiopian cardamom (korarima). I use it to make melekesha, mitmita, and various wats (stews), in addition to various Sichuan & Indian dishes.

I like the tea I make from the seeds. It was suggested as a smoother for throat and digestive system. Too soon to comment on that. Note that it is a bit of a chore to get the seeds out of the pod. Hint: use a sharp knife to cut the end off the pod, then peel back the husk.
